<p>Ofen auf 180-200° C vorheizen.</p>

<p>Rote Bete waschen, die Enden abschneiden und raspeln. In eine Schale mit Olivenöl, grob gehackten Walnüssen, Salz und Pfeffer geben. Alles gut vermengen.</p>
</li>
<li>
<p>Blätterteig flach auslegen (Papier dran lassen und als Unterlage benutzen). Dann den Ziegenfrischkäse grob zerbröseln und auf dem Teig verteilen. Die Bete-Nuss-Mischung darüber verteilen und zum Schluss etwas Dattelsirup (oder gehackte Datteln) verteilen.</p>

<li>Die fertige Rolle in gleichgroße und nicht zu dicke Scheiben schneiden (2-3 cm dick). Tipp: Nehmt ein scharfes, großes Messer und denkt nicht zu viel drüber nach <img decoding="async" src="https://wittschap.de/wp-content/themes/Divi/includes/builder/frontend-builder/assets/vendors/plugins/emoticons/img/smiley-wink.gif" alt="wink" /> Die Scheiben können später noch ein bisschen zurechtgedrückt werden.</li>

<p>Scheiben/Schnecken auf einem Backblech mit Backpapier verteilen. Wer mag kann jetzt noch restlichen Käse oder andere Toppings auf die Schnecken legen.</p>

<li>
<p>Ca. 10 – 15 Minuten backen, bis sie außen gold-braun und knusprig sind. Leicht abkühlen lassen und dann servieren.</p>

<p>Eine Panne erhitzen, nach und nach die Puffer formen und in Öl ausbacken (Tipp: lieber langsam zu beginn, damit alles gar wird und dann etwas die Hitze hochdrehen, damit sie knusprig werden).</p>

<p>Ihr könnt parallel auch den Ofen auf 100-150° C vorheizen, dann bleiben die fertigen Puffer schön warm, bis alle fertig sind.</p>

<p>Schneidet nur ab, was wirklich sein muss. Die Enden bei Bete, Karotten und Zwiebeln und ggf. Stellen, die euch komisch vorkommen. Die Schale bleibt dran! Auch die Zwiebelschale!</p>

<p>In einer Schüssel mit Öl und Salz mischen. Auf einem Backblech mit Backpapier verteilen und für ca. 45 Minuten in den Ofen packen.</p>

<p>Nach dem Backen kurz abkühlen lassen (ca. 10 Minuten).</p>

<p>Dann alles grob kleinschneiden, die Zwiebeln aus der Schale holen und alles in euren Mixer/Küchenmaschine oder eine Schale geben, falls ihr einen Pürierstab benutzen wollt.</p>
</li>

<p>Gewürzt wird mit Schwarzkümmel, Kreuzkümmel, Tahin, etwas Zitronensaft, Pfeffer und etwas Salz. Ihr könnt den Aufstrich so grob oder fein pürieren, wie ihr mögt – ich habe ihn recht grob gelassen.</p>

<p>Statt als Aufstrich passt die Mischung auch super zu Kartoffelgerichten.</p>

<p>Das Gemüse schälen und alles in kleinere Würfel schneiden. Sellerie und Kartoffel in einer Schale sammeln und beiseitestellen. Das restliche Gemüse zusammen mit Olivenöl, Balsamico, Ahornsirup, Sojasoße sowie je einer Prise Salz und Pfeffer vermischen und in eine Auflaufform geben. In den Ofen stellen und einen Timer auf 20 Minuten stellen.</p>

<li>In einem Topf etwas Olivenöl erhitzen und den Knoblauch hineingeben. Ganz kurz heiß werden lassen und dann Sellerie- und Kartoffelwürfel dazu geben. Ordentlich salzen und immer wieder umrühren (für ca. 5 Minuten).</li>

<p>Mit Hafersahne und Wasser ablöschen und die Hitze reduzieren. Das Lorbeerblatt dazugeben und alles offen ca. 10 Minuten köcheln lassen.</p>

<p>Das Lorbeerblatt aus dem Topf nehmen, ein Stückchen Butter zu der Mischung geben und anschließend alles in einem Standmixer oder mit einem Zauberstab glatt pürieren. Nochmal abschmecken und ggf. nachwürzen.</p>

<p>Wer mag streut ganz zum Schluss noch ein wenig Zitronenabrieb auf den fertigen Teller und träufelt etwas Olivenöl darüber.</p>

<p>Den Ofen auf 200° C (Umluft) vorheizen. Beten waschen und die Enden abschneiden (ggf. sehr holzige Stellen der Schale entfernen). Anschließend halbieren (bei größeren Knollen in Würfel oder Scheiben schneiden; bei sehr kleinen Knollen nicht weiter aufschneiden). Ich hatte eher dünne, längliche Knollen und habe sie halbiert und anschließend eingeritzt.</p>

<p>Nun kommt die Bete für ca. 25 Minuten (je nach Größe) in den Ofen. Bei Würfeln eher 15-20 Minuten.</p>
</li>
<li>
<p>Nach etwa 10 Minuten einmal alles mit einem Kochlöffel umwälzen und die Bete in die Mitte der Form ziehen.</p>
</li>
<li>
<p>Macht am besten einen Test mit der Messerspitze, ob die Bete gar ist. Sobald die Flüssigkeit ausreichend karamellisiert ist, die Bete aus dem Ofen nehmen (nehmt die Bete am besten einzeln aus der Form, damit die verbrannten Flüssigkeitsreste nicht im Essen landen).</p>

<p>Die (rote) Bete waschen, schälen und in mundgerechte Stücke schneiden. Mit Wasser, Salz und Apfelessig kochen, bis sie gar (bissfest) sind. Abgießen und das Kochwasser dabei auffangen. Beides zur Seite stellen, damit es abkühlen kann.</p>

<p>Alle Zutaten für den Teig (außer das Wasser!) in eine Schüssel geben, mit den Fingern vermengen. Nach und nach etwas kaltes Wasser dazugeben (optional etwas vom Kochwasser nehmen). Der Teig sollte krümelig aber doch zusammenhängend sein. Eine Teigkugel formen und abdecken (z.B. in eine Dose mit Deckel)</p>

<p>Seidentofu leicht abtropfen lassen und zusammen mit Öl, Senf, Salz und etwas Kochwasser (für die Farbe) verrühren. Wenn alles cremig ist, die Speisestärke dazugeben und zum Schluss ein wenig gehackten Dill. Abschmecken und ggf. nachwürzen. Bete-Würfel und ggf. gehackte Walnüsse unterheben und zur Seite stellen.</p>

<li>Jetzt könnt ihr den Ofen auf 180° C (Umluft) vorheizen.</li>
<li>Zurück zum Teig: Ihr braucht etwas Platz, Mehl und ein Nudelholz sowie eine Springform und Backpapier. Legt die Springform mit Backpapier aus und fettet den Rand mit etwas Butter/Margarine ein.</li>
<li>Der Teig wird ausgerollt und muss dabei so groß werden, dass er den Boden und zusätzliche 1-2 cm der Springform ausfüllt (zwischendurch einfach die Form kurz drauflegen). Den überschüssigen Teig könnt ihr später auch als Streusel über die Quiche streuen, bevor er im Müll landet 😉</li>

<li>Legt den Teig in die Springform (dafür am besten bemehlen und falten). Dann müssen die Ränder angedrückt werden.</li>
<li>Ihr könnt den Teig jetzt einmal für ca. 10 Minuten vorbacken, wenn ihr ihn knuspriger haben wollt. Es kann aber auch direkt weitergehen.</li>
<li>Nun kommt die Füllung auch den Teig und optional kommen die restlichen Teigkrümel und das Topping oben drauf. Für das Topping einfach alle Zutaten kurz mit den Fingern vermischen.</li>

<p>Mehl, Backpulver und Salz in einer Schüssel vermengen. Kaltes Wasser dazugeben und alles erst mit einer Gabel und dann mit den Händen zu einem glatten Teig kneten (dauert ein bisschen). Anschließend in 6 gleichgroße Kugeln teilen und jede Kugel auf einer bemehlten Arbeitsfläche mit dem Nudelholz in dünne, runde Fladen formen. Tipp: ordentlich Mehl benutzen, dann klebt nichts zusammen.</p>

<p>Kartoffeln mit Wasser und etwas Salz in einem Topf zum Kochen bringen.</p>

<p>Beten schälen und in Würfel schneiden (dann kochen sie schneller durch). Mit 200 ml Wasser und ½ TL Salz in einem kleinen Topf ebenfalls zum Kochen bringen.</p>

<li>
<p>In der Zwischenzeit die Radieschen, den Apfel und die Frühlingszwiebeln putzen/waschen und dann in kleine Stückchen schneiden. Zur Seite stellen.</p>

<p>Salbeiblätter und Knoblauch fein hacken und ebenfalls zur Seite stellen.</p>
</li>

<p>Kartoffeln, sobald sie gar sind (dafür einfach mit einem Messer anstechen und prüfen), angießen, mit kaltem Wasser abschrecken und kurz ruhen lassen.</p>
</li>
<li>
<p>Wenn die Bete gar ist (ebenfalls anstechen und prüfen), gesamten Topfinhalt inkl. Kochwasser pürieren. Entweder mit einem Stabmixer direkt im Topf oder im Standmixer (dafür am besten vorher etwas abkühlen lassen). Apfelessig, Honig und Öl hinzugeben und alles weiter pürieren. Mit Salz und Pfeffer abschmecken. Es sollte etwas zu salzig sein, da die Kartoffeln noch viel Salz aufnehmen werden</p>
